Day 5 - Chicken (Patricia A.)

     Today was the day we made chicken satay. It was accompanied by a peanut sauce and a mango salad. The day started with the process of marinating the chicken. We used a lot of turmeric in the marinade alongside with various other ingredients such as limes, chili paste, fish oil which smelled less than good, brown sugar, garlic, ginger, and coconut milk. W proceeded to save a quarter of a cup of said marinade for later use in the peanut sauce. 
     The peanut sauce was a simple process similar to the chicken marinade. Sayer squeezed a lime for it and that was the highlight of the day. The sauce was constructed through the combination of lime juice, hot water, peanut butter, lime zest, garlic and ginger, soy sauce, and the remaining marinade. It was whisked for a considerable amount of time. The next step in our journey was a mango salad, most groups made some variation of pico de gallo mixed with diced mangos. 
     We let the chicken sit in the marinade in the fridge for a while then proceeded to the last step. We finally were ready to put the pieces of chicken on skewers and grill them using a griddle that we brought from the high school campus. They turned out very yellow most likely from the turmeric and tasted a bit dry but were tasty with the peanut sauce according to a local source. Then the theatre kids aggressively cleaned the kitchen while spontaneously bursting into song during the process of washing dishes.
